Usually for Christmas i have turkey dinner!! Usually I have alot of people coming by and such!! (big family) So I get at least a 20 pound turkey!! Its usually frozen so i defrost for 2 days in sink and then take guts out of it (usually in bag along with neck) Wash them put in roaster then wash out turkey and stuff with my own stuffing!! Stuffing-I save bread heals from bought bread in freezer for when i do turkey or chicken and use them chop them in food processor till crumbs and put fried onions worchestershire sauce, can chicken broth or soup(sometimes turkey if u can find it or oxo package dissolved in hot water), also add about 1/4 cup butter melted salt and pepper and alot of summer savory ;D!! Mix it well and should be consistancy that if u squeeze it with hand should stay in clump!!If too dry add touch hot water!!Once turkey stuffed i put in roaster with the neck and such and put water around up to half full and then put salt and pepper only on turkey itself and cook at about 375 for about 3 to 4 hours depending on size!! An hour before its cooked i put a whole onion cut in quarters on outside as well as carrots peeled and cut around the turkey to cook!! (check water around about every hour too keep at about half full) Take all out when done fork should go into turkey easily or sometimes the turkey is just falling off bone!! lolTake them all out to platters or bowls to serve!! I leave left over in to make my gravy!! I put on high on stove top and just add a touch salt and pepper!! When starts to boil i turn down to about 3 then take some cornstarch in about a tablespoon cold water mix and then dump in (to thicken the gravy)!! Should have lots of flavor from the veggies and the turkey!! Then strain through a strainer for serving!! All left over goes to big pot for soup(bones and stuff from carving along with stuff strained from the gravy!!(makes delicious soup!!)For the soup-later that day or next night i have all scraps and bones in pot(and anything left over that is not able to eat) and put in big pot(biggest one i have) fill it with water just add some salt and pepper in and bring to boil then turn to simmer low heat for about 3 hours (or more depending on water on it ) then strain it (take bones and stuff out ) cool then freeze broth in container in freezer ( i use a big ice cream container) - or take leftovers carrots potatoes or meat from turkey that you arent going to use in anything else from deboning and add it to soup heat and serve!!Potatoes (big pot full) cut up and cooked in water I put on when i put carrots and onion around turkey!! I add salt and touch of vinegar (to keep them white) then mashed with about 1/4 cup butter and 1/4 cup milk!!Can peas heated on stove in pot(sorry dont like frozen that much) Can corn heated on stove in pot For dessert I usually have pies all home made- Lemon, Apple(with lots of cinnamon), pumpkin, and mincemeat -sometimes choc coconut cream or butterscotchAlso for Christmas i tend to do alot of baking cookies and breads which i give out as gifts to people!! (cheap and well appreciated esp by those that dont do alot of that)Hopefully that tells u some of what I do for christmas!! Love Leah
